Fudge. Here’s whats needed
•    A non-stick heavy-based saucepan
•    A cooking thermometer
•    Multiple baking trays
•    1lb fine white sugar, ½ pint semi-skimmed milk, 2oz soft butter, 14oz condensed milk.

Method: Whilst frequently stirring, mix and melt all the ingredients in the pan slowly. When the thermometer displays around 110oC, the mixture should begin to darken and look more caramelised. Take the fudge from the heat and as it cools continue to stir so that the mixture crystallises. Keep stirring until it becomes too viscous to stir by hand. Dispense the mix into a couple of trays and leave for a good couple of hours to cool. When cooled, divide into squares and share out

Choc Chip Cookies. Here’s whats needed
•    Mixing bowl
•    Grease-proof paper
•    Baking trays
•    4.5.5oz flour, 2.5oz butter, 1 egg, 2oz brown sugar,2oz caster sugar, 4oz choc chips, ½ teaspoon bicarbonate of soda, 1 teaspoon vanilla extract.

Method: Add flour, sugar, butter, vanilla extract, and bicarbonate of soda into a bowl and mix together well with your hands or a spoon if you don’t want to get mucky. Add the egg and continue mixing until the mixture is doughy and a little sticky. Roll the mixture into golf sized balls and places them onto the baking trays which you have pre-lined with grease-proof paper. Leave a good couple of inches between each ball as they will spread out and expand. Heat in the oven at between 180-200oC for around 12 minutes, but it is best to keep and eye on the cookies as ovens vary in cooking speed. Crock Pot Recipes

If you have bought a crockpot recently, you probably have one of the newer models. A lot of these have a saute feature, which means you can saute meat or vegetables in the crockpot itself.

This is obviously preferable to sauteing on the stove, then having to transfer the sauteed ingredient, plus everything else, to the crockpot. A crockpot is a great investment because you can cook everything from beef stew to French onion soup in it.

Crock-pot cooking gets a bad rap sometimes. Some people call it lazy cooking. I call it efficient cooking. With most households having two working adults, it’s imperative that all non-family time is managed wisely. Many crock-pot recipes take only 5 – 10 minutes to prep. It can be placed in the slow cooker before work and be done when you come back home. When you open the door, you’ll smell the wonderful aroma of a home cooked meal wafting through your abode.

Now take a large skillet, cast iron if you have it, if not that is ok. This is called Rue. Add oil and flour, stir well over high heat. Stir constantly. Keep on heat until this mixture turns a Medium brown (most Cajuns make it very dark, but if you do it sort of taste burnt, in my opinion). I recommend cooking until it is a little darker then a wooden spoon. Add the seasonings, paprika, salt & pepper, chicken seasoning, & garlic. Add the cut up veggies and MIX well. Cook an additional 5 (five) minutes. This mixture will be thick,

Skin the chicken wash thoroughly. I season the chicken with garlic powder, paprika, & chicken seasoning. Place in crock-pot to cover the bottom. 1 layer of chicken take ½ of the Rue cover the chicken, make a second layer of chicken, cover with Rue just like the first layer. Add 2 cups of water cover and cook 4-5 hours until chicken falls off the bone.

Tex Mex Chili

What you need:

2 lbs round steak cut into bite-sized pieces
151/2 oz can kidney beans, rinsed and drained
1 medium onion, chopped
1 green pepper, chopped
2 garlic cloves, minced
2 (8 oz) cans tomato sauce
41/2 oz can green chiles, drained and chopped
28 oz can diced tomatoes, undrained
1 T chili powder
1 t cumin
2 T olive oil
1 t salt

Snap or cut the ends off the asparagus, then cut the spears into one-inch lengths. Finely chop the green onions. Peel the potatoes and cut them into half-inch cubes.

Put the broth, potatoes, asparagus and green onions into a crockpot, cover it and cook for about six hours on low, or until the potatoes are tender.

Puree the vegetables using a hand blender or transfer them to a blender or food processor with some of the liquid, then put the puree back in the crockpot.

Stir in some salt and pepper, put the lid back on, and cook on high for about thirty minutes. Serve the French asparagus soup garnished with a swirl of sour cream and some fresh parsley. Bon appetit!

Once you have received your live lobster for delivery be sure and leave the bands on the claws as long as it is alive. These claws are very strong and with one quick snip can give you a broken finger if your not careful. The bands are to be removed as soon as the lobster is dead.

Defrosting frozen lobster meat or whole lobsters can destroy the flavors of them. Do not overcook when heating they should only be warm not hot to the touch. The meat will become a lot tougher if it gets to hot or is cooked to long.

It is very simple to cook live lobsters and only takes about ten minutes a pound to boil. All you need is a very large pot for boiling them with salt added and crab or seafood boil if you want them to turn out with more of a Louisiana flavor. Place lobster head first into pot and cook until the shells turn a bright shade of red. This means they are ready to be moved from the pot.

Lobsters heads hold much of the water they were boiled in so making a slight hole in them will drain out the cooking juices and seal the flavors in. This helps the meat inside stay tender and just ripe with flavor.

You can also recycle the water the lobsters were boiled in and freeze in jars or bags for soups or casseroles that you may want to make in the future.

Be sure your live lobsters are healthy. When you touch or handle a lobster its tail should curl downward and then go back to normal when let go of. Always check the smell of the lobsters it should be fresh, if you have any doubt then throw it out. They also should show a good amount of aggression when you handle them, this is a sure sign of great health in them. It is best that you cook live lobsters immediately upon receiving them as the flavors and taste are more delectable.

When preparing to cook your live lobster know that the hard shell takes longer to cook and the softer shelled ones take less time.

Grilling lobsters is another great and healthy way to prepare them. Whole lobsters are placed onto a hot grill and then left on one side til it turns bright red then turned and left on opposite side until that is the same in color. Serve with delicious garlic butter and gumbo if you have it on hand.

You can split live lobsters for delivery and cook on the grill too if a whole one is too much for just one person to eat. Place split sides down first and cook three minutes then turn to shell side and cook about 6 minutes longer. The shell will be the shade of bright red as it is when boiling when done. Add some lemon juice squeezed on it and of course butter and your ready to eat.
